As the new year rolls in, so do the resolutions. One of the most popular resolutions is to either lose weight or eat healthier to improve one’s lifestyle. The recipe below is one of many recipes that is perfect to kick off the new year right.
Mediterranean Chef Salad

Makes four servings
Ingredients:
1 package (18 oz) fat-free, plain precooked polenta
Olive oil cooking spray
2 pints grape tomatoes
2 tablespoons balsamic vinegar
1 cup canned cannellini beans, rinsed and drained
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1 head romaine, torn (about 6 cups)
20 basil leaves
4 oz fresh part-skim mozzarella, cut into small cubes
Directions:
1.) Preheat oven to 400 degrees.
2.) Cut polenta in half lengthwise and chop crosswise seven times to make 32 triangles.
3.) Cover a small baking sheet with the olive oil.
4.) Place triangles on baking sheet and coat them with the olive oil.
5.) Arrange tomatoes on a separate baking sheet and spray with olive oil.
6.) Bake both sheets for 10 minutes and then remove the tomatoes and stir them, keep the polenta in the oven.
7.) Return tomatoes to oven and cook for about 20 more minutes, or until tomatoes are wrinkled and slightly brown, flip the polenta over and bake for about 20 more minutes.
8.) Pour vinegar over the tomatoes and put them in a bowl.
9.) Mix beans, salt, pepper and pepper flakes in the same bowl.
10.) Place romaine and basil on a plate and pour the tomato mixture over.
11.) Place croutons and cheese on top.
