Hauntingly good cupcakes to make
In the mood for a festive treat? Try baking these easy to make chocolate cupcakes to share with friends and family and decorate them to add a spooky touch.
Ingredients
- 1/2 cup sour cream
- 1 cup buttermilk
- 3 eggs
- 1 1/2 cup hot coffee
- 3/4 cup vegetable oil
- 1 tbs vanilla extract
- 3 cups all-purpose flour
- 2 2/3 cup granulated sugar
- 1/2 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 tbsp baking soda
- 1 tsp kosher salt
- 1/2 cup sour cream
- 3 tsp vanilla
- 1 lb confectioner’s sugar
- 1 cup unsalted butter at room temperature
- 3 tbsp heavy whipping cream
- food coloring
- candies of your choice to decorate cupcakes with
- piping bags
- Preheat the oven to 350 degrees Fahrenheit and add cupcake liners to a cupcake pan.
- Sift together the flour, sugar, cocoa powder, salt, baking powder and baking soda into a large bowl. Whisk until everything is combined.
- In a separate bowl, combine the buttermilk, sour cream, eggs, vegetable oil, and vanilla then whisk together. Pour in the hot coffee and mix once more.
- Pour the bowl of wet ingredients into the bowl of dry ingredients and mix until completely combined.
- Pour batter into cupcake liners about 2/3 of the way. Put into the oven and bake for about 15-20 minutes or until a toothpick inserted in the middle comes out clean.
- As the cupcakes bake, begin preparing the buttercream. Mix the butter for about 5 minutes using a mixer.
- Sift the confectioners sugar and beat it in slowly. Add the cream and vanilla and beat everything until you have an even, fluffy consistency.
- Separate the buttercream into the number of however many colors you want to have for your cupcake frosting (3 colors = 3 separate bowls). Add in drops of food coloring to achieve desired colors.
- Put each buttercream frosting color into its own piping bag and begin frosting your cupcakes once they’ve cooled down from being baked in the oven.
- Use candy to add an extra touch of sweetness and detail to your cupcakes. A tip for decorating is to place M&Ms on top of a white circle of frosting as eyes for monsters, ghosts or other spooky creatures on your cupcakes.
